Eggie: Born in Placencia to a fishing family, I grew up fishing the waters of Southern Belize and started working as a local captain for The Moorings in 2003. With my fishing background I am able to find the best fresh fish and lobster for our guests. I enjoy telling our guests about Belize and taking them snorkeling in the best spots.
Emerson: From a very young age, Emerson was interested in cooking and food preparation. His mother owned a small local restaurant in Orange Walk and growing up he learned many skills helping her in her business. At the age of 17, he started working as a waiter in San Ignacio and quickly realised that food was his passion and that he wanted to pursue a career in food preparation. He started training as a bartender and waiter. From there he moved to various resorts where he did several courses, eventually being appointed as restaurant and bar supervisor. In this capacity, he moved between the three Coppola resorts, Blancaneax Lodge, Turtle Inn, and La Lancha in Guatemala. As a supervisor, he worked closely with the executive chefs of these resorts and learned many techniques and dishes from them. He also worked as the restaurant and bar supervisor of Ka’ana Resort and thereafter, to took over the management of a restaurant at Hopkins Bay Resort.
In 2014 Sporting Adventures started operations with one villa in Placencia and Emerson agreed to take over as manager. This job was a departure from the direct catering business in that he was responsible for all aspects of the running of the villa, from cleaning and building maintenance to catering to the guests. The operation grew eventually to 8 villas and his role became more managerial, overseeing cleaning and maintenance staff as well as customer service and reservations staff, but he still took on the responsibility for catering and enjoyed being the chef at one of the villas.
During the pandemic, he returned to San Ignacio where he ran a catering service from home. After businesses started opening again, he worked for a fishing charter business in Placencia, running their office and preparing all the packed lunches for the tours as the Primus (Sporting Adventures International) villas remained closed.
Since becoming the chef on board Calypso II Emerson has discovered a love of the ocean and of sailing that was quite unexpected. Growing up and living mainly inland, he had always enjoyed being along the coast but had not had the opportunity to sail until he joined The Moorings. He is continuously learning with each charter and attempts to convey that excitement and adventure to the guests on board.
Although not married, he has a long-term girlfriend who fortunately understands his enjoyment of being out on the water. Working with a male captain, they have compromised on the accommodations on board, taking turns to have the comfortable cabin and the smaller crew cabin. This works well and as a result both always bring their A-game to each charter.
